Chef Maeda-san's take on Ainu flavours at An Dining.

Executive Chef and Owner of An Dining Shinichi Maeada has crafted an especially authentic Hokkaido menu for summer with the Special Ainu Lunch Set featuring Ainu-inspired food. The set is created using traditional techniques as used by Hokkaido's indigenous people, as well as modern techniques and ingredients.

The set includes "Ohaw", organic rice mixed with milet and beans and pickled fuki. “Ohaw”, a soup-like dish, has lots of ingredients which are similar to Japanese hot pot, or "Nabe". To Ainu people “Ohaw” was favoured as a staple food, as they has limited rice or grains.

An Dining is also open for regular summer trading and menus.

When: Weekends only 11:30~15:00 (LO 14:30) through summer and limited to 20 serves.

Kumo Restaurant celebrates summer with fresh Hokkaido flavours served in a Homemade Bread and Lunch Buffet.

Enjoy Mt Yotei views with a main of your choice, a variety of Niseko vegetables, salads and dessert, plus 20 kinds of homemade bread. Coffee, tea and juice are also included.

Kumo Restaurant is grounded on local seasonal produce, with many of the vegetables used selected from around the Mt Yotei area including Makkari, Niseko and Kutchan. The restaurant is also open every day for regular Breakfast, Lunch and Dinner service.

One Plate Winner at Bistro Re Arbor

Crispy shrimp plate, or "ebi" in Japanese.

Opened late last year in the Izumikyo area of Niseko-Hirafu, Bistro Re Arbor now presents its summer offering of the One Plate Lunch. Select a main dish of your choice, then accompany it with soup, salad and a side dish. Plus, rice or bread for extra sustenance. The lunch also comes with a coffee, tea or an ice cream to opt it off.

Bistro Re Arbor's dishes have a contemporary twist and are mix of east-meets-west elements and seasonal and local products used.

Road Trip Stop at Pomme

Famous Rustusu Pork and seasonal vegetables.

Hidden away on a country road between Niseko and Makkari is local secret Pomme. The popular restaurant serves a Lunch Set created using mostly vegetables from Pomme's own farm. Choose from a main like Rustusu Pork, and the set is completed with appetiser, soup, dessert, and bread or rice.

They also make homemade mozzeralla and breads and serve up Makkari's iconic and delicious lily bulbs
